A WORTHY AMBASSADOR OF CUBAN CUISINE IN NEW JERSEY, USA: MASTER CHEF SERAFÍN SARDUY

A few days ago, I traveled to the state of New Jersey on business and had the great opportunity to visit Esquina Latina Restaurant—a very pleasant establishment with wonderful décor. There, I was able to meet a Cuban chef whose name I had—out of curiosity—noticed on the restaurant's menu; being there in person, I was able to meet him face-to-face. A very kind and charismatic man, Chef Serafín Sarduy spoke to us about the restaurant's origins, the inspiration behind its creation, and its culinary concept—Esquina Latina in the city of New Brunswick, New Jersey—where I was able to converse with him on many important topics regarding Cuba, but primarily about Cuban cuisine. Chef Serafín is a man deeply passionate about his profession; he boasts an extensive culinary career that has led him to win several major awards throughout his time as a chef, as well as for his entrepreneurial endeavors in his role as an independent contractor for hotels and restaurants. He shared with us that he is currently working with a New Brunswick-based investment group on various projects and feels deeply gratified by the work he is accomplishing through his business ventures. We were able to sample some of his dishes—which were absolutely delicious, a true feast for the palate—including the *Paella Marinera*, *Rabo de Toro* (Oxtail), and *Pollo Relleno* (Stuffed Chicken), as well as the famous *Ropa Vieja*, a traditional staple of Cuban cuisine. It was an explosion of flavors; the plating, presentation, vibrant colors, and taste astonished everyone in my party. We also tried some of the cocktails and sangrias prepared in the signature Esquina Latina style and were thoroughly satisfied. As for the service, it was excellent—attentive, pleasant, and delivered with a level of hospitality I will never forget. In my opinion, Esquina Latina in New Jersey is one of the finest Hispanic restaurants in the Garden State. I would like to extend my thanks to everyone who served us that day and offer my congratulations to Master Chef Serafín Sarduy for his outstanding work. I hope to return on my next visit to New Brunswick, New Jersey.
